He was such a helper. He scooped and poured the ingredients...then he started to stir. I took over because you need to really stir and stir and stir some more and then you think its not going to be sticky enough...you contemplate dumping more honey in...but you don't. You just continue stirring, stirring...just keep stirring. And - FINALLY - it is almost perfect! You add the add-ins and YUM!
Actually, I opted to not do granola bars. You can. The recipe makes great granola bars. I just find them hard to cut so I make granola bites. I use silicone muffin cups or silicone muffin pans. You don't need to do anything special to them. You just firmly push the mixture into the silicone cup and place the cups on the baking sheet. I really want to try making them more bite sized with mini-muffin cups. I have looked everywhere for them - they don't sell them at Target, Walmart, Meijer or Kroger.
They were so incredibly easy to make. And, Achoo was so proud. He ate two! The recipe made two dozen so we have some for later!
I am so glad I got this one on one time with Achoo to make such a yummy snack. He had lots of fun scooping and mixing our snack. He counted out the scoops - 1, 2, 3 and he tried to count the MnMs but when he got to 23 he said, "I eat one". I'd say that's pretty good Learning at Home for my little dude!

Recipe for Granola Bars or Bites2.5 cups of quick oats
0.5 cup crisp rice cereal
0.5 cup mini chocolate chips (or mini MnMs, like me!)
0.5 cup brown sugar
0.5 cup coconut oil
0.25 cup honey
0.5 t vanilla
Mix all the ingredients EXCEPT the mix-in (chocolate chips, mnms, etc). Mix really well. I usually use a glass bowl (with handle) and a mixing spatula. You'll need to stir, stir and stir. You want all the ingredients to look wet. Then, add in your mix-in. You can even add in a scoop of peanut butter or two if you would like! Scoop the mixture into the muffin cups and press firmly. Bake 350 for 15 minutes (until lightly brown). Let sit for 30 minutes and enjoy!
If you opt to make bars -- cook for 20 minutes. You probably will also want to line the baking dish with parchment paper. You need to let these sit for several hours (like 6 hours) and then you'll cut them. They are a bit crumbly but if you cut them right and wrap them they work well! We wrap them in parchment paper or plastic wrap (whatever is handy) and store them in an air tight container! They don't normally keep too long because the kids eat them. I'd say they'd stay fresh at room temp for at about a week!
