I love pancakes. I mean LOVE pancakes. It's my guilty pleasure so to say. In fact, I make and feed them to my kids at least three times a week because I LOVE pancakes. The hubby thinks enough is enough but let's be real - I LOVE PANCAKES. I'm big on feeding the kids a "healthy" breakfast and we alternate between lots of things. I don't love cereal (though we do have it in the house) more often than not I'm making eggs, bacon, sausage, fruit with yogurt, english muffins, bagels, muffins (from scratch) or pancakes....have I mentioned my love for pancakes, yet?
Well - I came upon this recipe for pancakes and I need to share it with you because I've made a lot of different pancakes and the kids voted this THE BEST PANCAKE RECIPE EVER. It's easy and healthy!!!
If you are following Trim Healthy Mama you can have THREE of these (medium-sized) for your E breakfast. With THM you won't want to use any butter but can top with fresh fruit or yogurt. The kids love to use whip cream and a few chocolate chips (not THM approved) or even fresh fruit. And, the hubby eats them, too! We haven't had any leftovers and the kids have requested these a few times already! All the kids voted them the best pancake EVER! I love them because they taste great but also because they are protein-packed!!
