Chocolate Chip Muffins!

2011-09-02-01-29-01_1000001220

This morning I made chocolate chip muffins for breakfast....from scratch.  I've done it before but today was different.  I was trying to find a little peace in my morning after it starting with one kid after the other waking up upset..."Daddy woke me up" "Achoo woke me up" "Achoo and Peanut were fighting" and so forth....so, I needed a little "me" time in the kitchen.  It ended up with deliciousness for the kids and a great breakfast (served with yogurt and fruit).
Here is the recipe for these delicious muffins!  Gator said, "These are like the most delish muffins ever Mom!"
Ingredients:
2 cups all-purpose flour
1/3 cup granulated sugar
1/3 cup light brown sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup melted butter
2 large eggs, lightly beaten
2/3 cup milk
2 teaspoons vanilla extract (real stuff)
1 1/4 cups chocolate chips (you can use regular or mini)

Directions
1. Preheat the oven to 375 degrees F. Line 12 muffin cups with paper liners. Set pan aside.
2. In a large bowl whisk together flour, sugars, baking powder, and salt.
3. In medium bowl stir together melted butter, eggs, milk, and vanilla extract until well blended. Make a well in the center of the dry ingredients. Pour the liquid mixture into the well and gently stir until combined. Stir in chocolate chips.
4. Spoon batter into muffins cups. Bake for 17-20 minutes or until a toothpick comes out clean. Remove muffins from the oven and allow to cool before serving.

OH.EM.GEE. they look and smell delicious....oh....and of course they taste delicious!
