The New Year has me focused on lots of things...the two big ones are saving money and eating healthy. I really want to trim down our spending at the grocery store, eat out less and eat healthier. I'm always searching pinterest for ideas - well, not always but when I'm on there if I see a good recipe or something that even just looks tasty I pin it for "some day". I'm also working on my "pinned it and did it board" so that I see that I'm actually doing things I pin and not just spending time pinning random stuff!
Lunches are always hard here. I feel like I'm feeding the kids the same thing. And, did I tell you A1 hates peanutbutter (more on this later) so it just stinks. A2 loves Macaroni and Cheese but the box with the powder isn't the healthiest and when you buy Annie's its still got stuff you don't want in your diet...not to mention its more than $1.25 a box these days! So, I sent Vegas to the grocery store (so I didn't have to go) and he got some ingredients to try a few new recipes this week...
So, I saw this "make easy mac in a mug" recipe...easy, right? Well...first, follow the directions. It calls for 1/3 cup of elbow macaroni, 1/2 cup water, 1/4 cup milk, 1/2 cup shredded cheese -- season with salt/pepper, etc. I saw no other instructions...so what did I do? I mixed it all together and microwaved it for 3:30 because that's what easy mac cooks at...I didn't take a photo of what happened next (picture an explosion of crap in my microwave)....instead - find actual directions...1/3 cup pasta, 1/2 cup water...microwave high 2min, stir, microwave high 2min, stir...add milk and cheese microwave 30 seconds...and voila! I dumped mine from the mug into a kid friendly bowl with a kid friendly spoon...I didn't try it but I hear it is "the best ever" (from all the kids)...so go ahead and try it! It's so much cheaper than the easy mac...tastes way better...see, I hit many birds with this one stone!
Since I can't eat dairy (milk, cheese, etc) I opted for this recipe I found on pinterest -- Avocado Egg Salad. It was so incredibly super easy and super yummy...A2 really liked it too! I added it into my fitness pal for a recipe and I have to say I didn't feel like it was overly bad for me...so incredibly yum!!!
