I'm sharing one of my FAVORITE recipes that I seem to make over and over and over again! It's definitely a hit here in our house! It's called Grecian Delight! It is so incredibly easy to make and has very few ingredients and is pretty healthy (in my opinion)!
1 c orzo cooked & drained (I usually use orzo but sometimes I'll substitute with other pastas)
1 lb ground turkey (you could use other stuff I suppose but I always use turkey)
2-3 medium zucchini chopped up nicely
1 onion (though I usually just use a half and also chopped up)
2T extra virgin olive oil
1 T tomato paste
8 oz tomato sauce
1/2 t cinnamon
1/2 t garlic powder
1 t dill
1 c feta cheese
The how to part:
Preheat the oven to 400 degrees and spray a large casserole dish with nonstick cooking spray.
Heat 1 Tbsp. of the oil in a large heavy skillet over medium heat. Add the zucchini and onions and cook them about 10 minutes.
Take the orzo and veggies and mix together in the casserole dish. Sprinkle with dill.
Heat the remaining oil in the same skillet and brown the meat (make sure you break it up). Add the remaining ingredients and stir it until the mixture is bubbly. Pour this on top of the orzo mix. Top it evenly with the cheese.
Cover the casserole tightly and bake it for 20 minutes and SERVE!!
You can also make this ahead and store in the fridge for a couple days. The best part is you can also use this as a freezer recipe! We've made three batches at a time. Store one in the fridge to use during the week and we store two in the freezer for meals.
If you are going to make this and store in freezer I recommend THESE containers. Also, pull it out and thaw it in fridge for the day before cooking (I've not attempted to cook it from frozen).
