Earlier in the day I made Peanut Butter Cookies with Peanut and Gator spent time in the playroom with Achoo. I had such a wonderful time baking with just Peanut that I wanted to give Gator a chance as well. We decided to make chocolate chip muffins! Because, YUM!
I followed this recipe from Two Peas and Their Pod but I'll post it here for you to view.
2 cups all-purpose flour
1/3 cup granulated sugar
1/3 cup light brown sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, melted and cooled
2 large eggs, lightly beaten
2/3 cup buttermilk (and since I had just tossed this earlier thinking I have no need for buttermilk I used 1% milk)
2 teaspoons vanilla extract
1 1/4 cups chocolate chips ( I used semi-sweet)
1. Preheat the oven to 375 degrees F. Line 12 muffin cups with paper liners. Set pan aside.
2. In a large bowl whisk together flour, sugars, baking powder, and salt.
3. In medium bowl stir together melted butter, eggs, buttermilk, and vanilla extract until well blended. Make a well in the center of the dry ingredients. Pour the liquid mixture into the well and gently stir until combined. Stir in chocolate chips.
4. Spoon batter into muffins cups. Bake for 17-20 minutes or until a toothpick comes out clean. Remove muffins from the oven and allow to cool before serving.
So, we made them and OH.EM.GEE. they look and smell delicious.
According to Gator they are "the best chocolate chip muffins ever in the world..." I asked Vegas what he thought and he said they were good but maybe not the best in the world. So, take it from a five year old...or a guy who has celebrated his 21st birthday many times...either way I think they look & smell DELICIOUS!

I was shocked because he nearly ate an entire muffin...I can't help but think where do you put all this food you eat little man?
When Peanut awoke from her nap she had one too! (Love her hair)
Well, we've made muffins & cookies and the kids are asking to make granola bars & bites again (I think its one of their favorites!).
